
It might strike some as strange but my excitement about the holidays start very early. Day dreams october onwards only consist of christmas pudding, pork sorpotel and sannas, lasagna, steak and mashed potatoes, spare ribs, stuffed calamari, skewered prawns and the cherry on the top, the King - The Roast Chicken. It always holds the most important central position on the dinner table and it’s always and honour to carve the chicken or turkey, depending on your preference of meat.
A full chicken is cleaned and marinated with salt, pepper, lime and cover it with cling film for a while till you are ready to cook. You can also use herbs like oregano and parsley if you are a fan like I am.
For the best part which is the stuffing you need to giblets of liver, gizzard and kidney cut into tiny bits that are boiled first and then peas, carrots and potatoes are also boiled. You can also cut up pieces of sausages and bacon, mushrooms and anything that you think will add to the flavour to the chicken, Ginger and garlic is then tossed around in a pan along with all the rest of the stuff and then finally spooned into the chicken which is put in the oven to roast. When it comes out, it has a delicious looking golden brown glaze because of the juices of the meat, the oil and the butter that oozes out because of the roasting. And voila ~ your tender delicious roast is ready to devour.
My favourite part about the holidays is undoubtedly the food. My mother and her 5 sisters and 1 sister in law manage to whip up a feast that you wont be forgetting any time soon after eating it. Ah! Just the thought makes me smile…. I can’t wait to go back home for the holidays!

I cant wait for the holidays... we should try marinating the turkey/chicken in brine Nigella style.
